ALICE'S MUSHROOM PIE
Serves 8-12
1/3 cup. butter
1 med. onion chopped
1 lb. mushrooms (Shiitake are delicious,
but can be expensive So you can mix 1/2lb Shiitake
with1/2lb of a less expensive mushroom.)
1 tsp Mushroom Ultimate
Seasoning
1tbls. flour
1/2 cup. light cream
1tbs cognac or sherry, salt and pepper
Pastry for a 2 crust 8" pan
Melt butter in skillet, add onion and sauté until transparent.
Slice mushrooms to the desired size, add to onion cook 3 to 4 minutes.
Sprinkle with Mushroom Ultimate Seasoning, Stir in flour, add cream and bring to a
boil
stirring. Add cognac, salt and pepper.
Cool while making pastry.
Preheat oven to 450oF.
Line glass pie plate with pastry. Cut second
piece into strips 1/2" wide for lattice top. Turn
cooled mushroom mixture into pastry lined pan.
Arrange lattice strips. Cook at 450o for 20 minutes or
until crust is
brown.
