Porcini Mushroom Soup
This soup can be made with Sliced Porcini we sell in
3/4oz. bags or in bulk. Here at home we use the Porcini Pieces we sell in the
Specials section of our web site.
1 1/2oz Dried Porcini Mushrooms
1 cup diced celery
3/4 cup diced onion
1 stick butter (cut in half)
1 tbls Mushroom Garlic seasoning
1 tbls flour
1 quart Half & Half
salt and pepper
Put the dried mushrooms in a container and add 2 cups hot
water, set aside.
In a soup pot melt 1/2 stick butter, add onion and sauté a few minutes until
onion turns clear. Add celery and cook 2 minutes more.
Drain mushrooms, reserving liquid, rinse them in a colander and add to
onion and celery. Add 1 cup of the mushroom water, careful not to get any
sediment.
Add half & half and bring to boil, stirring constantly. Melt the other 1/2
cube of butter, in a small bowl the microwave, (don't get it too hot) mix
in the flour and Mushroom Garlic seasoning to make a Rue. Add it to the soup and
mix it in toughly, lower the fire to simmer add salt and pepper to
taste. Ready to serve in 15 to 20 minutes.
