MUSHROOMS & FISH IN FOIL
Serves 5
5 fillets of halibut, or any fish of your likening.
1 tbls lemon juice
2 tbls brandy
butter or margarine (butter is always better)
1 cup sliced fresh Shiitake mushrooms (about 4oz.)
1 medium green apple
10 thin onion rings
5 tsp snipped chives
Pistol River Mushroom Ultimate Seasoning
Wash fillets in lemon juice & 2 cups water; drain. Pat dry with
paper towels. Brush both sides of fillets with brandy. Sauté
mushrooms in butter about 5 min or until
golden. Remove; set aside. Slice apple & sauté 4min., turning
once.
Preheat oven to 375o F. Tear off 5 (12-inch)squares of foil.
Place a fillet diagonally on half of each square, 1˝ inches from edge.
Top with mushrooms, apple, shrimp, onion rings & chives, dividing evenly.
Sprinkle with "Mushroom Ultimate Seasoning"
Drizzle with 1tbls melted butter. Fold foil on diagonal; turn up edge;
fold over twice, to seal.
Place foil packages on large cookie sheet or jelly-roll pan.
Bake 20 - 25 minutes. OR place in a microwave able container and microwave
5 min; turn fish. Microwave 4 more min.
To serve: Slash a cross in top of each package; fold back corners.
Sprinkle fish with chopped parsley, if desired.
